Hotels, Resorts, and Casinos

Every outlet on the property, documented on one schedule.

A single hotel or resort property can hold a banquet kitchen, several restaurant outlets, a bar kitchen, and room service, each with its own hood system and its own service history. We service the property as one engagement, working the overnight windows your operation actually has.

The operating reality

What is different about this work

A property is rarely one kitchen. Banquet, the restaurant outlets, the bar, room service, and employee dining each carry their own hood and their own service history, and they cook at volumes that have very little in common. The banquet kitchen can sit quiet for a week and then run harder in three days than an outlet does in a month, which is why one schedule applied across the property fits none of them.

The window is the other half of the problem. A kitchen has to be cold and down before anyone opens it, and on a property that never fully closes, that means working outlet by outlet against their own service hours. A late banquet moves the window, and the plan has to move with it.

By the time you are choosing a contractor, the cleaning itself is assumed. What you are actually judging is whether a crew can be badged through back of house without becoming your problem, whether the kitchen is genuinely ready for morning service, and whether the report is in the file before the next brand audit or insurance review asks for it.

What you are managing

The constraints we plan around

01

The overnight window is the whole constraint

Kitchens have to be cold and down, and the window is short. Work is scheduled around your operation and the kitchen is left ready for morning service.

02

Several systems, one compliance record

Banquet, outlets, bar, and room service each carry their own hood. Every system is documented individually and tracked under one property engagement.

03

Back of house is a controlled area

Uniformed, badged technicians, which matters more in gaming than almost anywhere else we work.

04

Guests should never know we were there

Equipment and surfaces are protected during service, and impacted areas get a post-cleaning wipe-down and polish.

Casinos and casino resorts

A casino property removes the last of the slack. Cooking runs around the clock, so there is no point in the night when the whole building is down, and outlets have to be worked one at a time against their own hours. Under NFPA 96 Table 12.4, 24-hour cooking sits at a quarterly inspection interval, which makes the schedule itself part of what you are defending.

Access is the other constant. Back of house in a gaming property is controlled, crews are escorted, and who is in the building is recorded. Uniformed, badged technicians and a schedule agreed in advance are the baseline here, and a contractor who treats them as a favor does not get through the door twice.

How we work here

What changes, and what does not

The cleaning scope is the same NFPA 96 work everywhere. What changes is the scheduling, the documentation format, and how access is handled.

  • Property-wide system inventory with documentation for each kitchen
  • Scheduling built around the banquet and event calendar, worked overnight and after close
  • Uniformed, badged technicians cleared for back-of-house access
  • NFPA 96 compliance report and compliance sticker after every visit
  • One company and one phone number for the whole property, with no franchise routing

A documented inspection, yours to keep

For hotels, resorts, and casinos, we will walk the system and give you a documented look at its condition: photographs of what is actually in the ductwork and at the fan, with findings referenced to NFPA 96 and IKECA cleanliness thresholds. It is yours to use internally whether or not you work with us.
